5 large ripe Tomatoes sliced into wedges
1 cup kalamata olive pitted
1 Red Onion peeled and thinly sliced
Zest and juice of 1 Lemon
0.25 cup Extra Virgin Olive Oil
1 bunch chopped Flat-leaf parsley
Salt & Pepper
Toss all the ingredients together in a medium-sized salad bowl.
