Tomato Olive Salad


  • 5 large ripe Tomatoes sliced into wedges

  • 1 cup kalamata olive pitted

  • 1 Red Onion peeled and thinly sliced

  • Zest and juice of 1 Lemon

  • 0.25 cup Extra Virgin Olive Oil

  • 1 bunch chopped Flat-leaf parsley

  • Salt & Pepper


  • 1.

    Toss all the ingredients together in a medium-sized salad bowl.
