  • A squeeze of lemon juice

  • 1/2 teaspoon vanilla essence

  • 1 cup castor sugar

  • 7 egg whites


  • 1.

    Separate egg whites and mix at high speed for 7 minutes

  • 2.

    Slow add castor sugar and continue to mix for 7 minutes.

  • 3.

    Add vanilla essence and lemon juice and mix in.

  • 4.

    Prepare a baking tray and line with baking paper.

  • 5.

    Spread mixture over paper 50mm thick.

  • 6.

    Cook in preheated oven at 140 deg for 35 to 40 minutes.

  • 7.

    Test by sticking knife and it coming out clean.

  • 8.

    It should be crunchy on the outside and quite soft on the inside.
