A delicious way to cook a chicken, Roasted, Webber, Or Grill

Ingredients

  • YOU NEED

  • 1 x 1.8kg whole fresh chicken

  • ¾ cup peanut oil

  • ¼ cup ABC Kecap Manis

  • 2 cloves garlic crushed

  • 2 teaspoons lemon juice

  • Cracked pepper to taste

  • Sea salt to taste

  • 2 teaspoons Dijon mustard

  • ½ small onion

  • 1 sprig parsley

  • 1 teaspoon smoked paprika

Method

    Place chicken breast side up on cutting board.

  • 3.

    With a sharp knife cut the chicken in half along the breast bone, this may take a little time, be sure not to cut the chicken completely in half.

  • 4.

    Once the chicken is cut, place your fingers on each side and open the chicken like a book.

  • 5.

    Turn chicken over now and press very firmly on it to flatten it, the flatter the better.

  • 6.

    Make 2 cuts reasonably deep in each leg and each breast, this allows the flavors to get in and also allows even cooking.

  • 7.

    Put all other ingredients in a blender and wiz for a minute or two.

  • 8.

    Brush the chicken both sides liberally with the marinade and set aside for 1 hour

  • 9.

    There are several ways to cook this now, for ease an oven is good, but for flavor a grill is great.

  • 10.

    Over a medium hot grill place the chicken cut side down and cook for 10 minutes.

  • 11.

    Then turn chicken over at a slightly lower heat to brown and crisp skin 10 minutes

  • 12.

    Each time you turn chicken, recoat with the marinade.

  • 13.

    I would turn this chicken 6 times in the cooking process.

  • 14.

    It could take 90 minutes cooking, but check all the time with a fork and clear juices.

  • 15.

    Once removed from the grill place the chicken in a roasting tray and cover with alfoil for 20 minutes, this really makes a difference to the tenderness of all the meat.

Notes

This is a beautiful way to eat chicken. Serve with fresh salads and a cold glass of wine.
