Spiced Banana Muffins

Ingredients

  • 1.5 cups Flour

  • 0.5 cup bran

  • 1 tablespoon Baking powder

  • 0.25 teaspoon Salt

  • 1 teaspoon ground Nutmeg

  • 2 ripe Bananas peeled

  • 2 Eggs

  • 1 cup brown sugar

  • 1.5 cups vegetable oil

  • 1 teaspoon vanilla extract

Method

  • 1.

    Preheat oven to 375°F.

  • 2.

    Whisk together the flour, bran, baking powder, salt and nutmeg.

  • 3.

    Mash the bananas and stir in the eggs, brown sugar, oil and vanilla.

  • 4.

    Mix well and add to the dry ingredients. Stir until well combined.

  • 5.

    Spoon the batter into a prepared muffin pan and bake until the tops are golden brown and a toothpick comes out clean when inserted, about 12-15 minutes.

  • 6.

    Serve warm with Raspberry Butter (recipe from this episode).

Hi All! Just baked these muffins today and came out too oily for me. I didn't have any bran so substituted with oatmeal also. I didn't care for the texture of the oatmeal in the muffins probably because they were so oily. Next time I will experiment with using only 1 cup of oil and adding 1/2 cup of flour in place of the bran. I really like the method of this recipe though.
