Ingredients

  • 2 teaspoons oil1.2 kg pork or beef ribs1 chorizo, chopped1 rasher bacon, chopped1 x pack Continental Chilli Con Carne Recipe Base4 cups (1 litre) water2 carrots, thickly sliced2 sticks celery, thickly sliced1 x 400g can black beans, drained and rinsed¼ cup chopped coriander or parsley for garnishSteamed rice and silverbeet to serve

Method

  • 1.

    Heat oil in a large saucepan and brown ribs, chorizo and bacon.Add recipe base, water, carrots and celery and bring to the boil.Cover and simmer for 1 hour or until meat is tender.Remove lid and simmer uncovered for a further 30 minutes until sauce has thickened.Stir through beans and heat through.Top with coriander or parsley and serve with rice and silverbeet.
