The honey is the hero in this delicious brownie recipe.


  • 125 g butter

  • 100 g white chocolate, broken into pieces

  • 115 g (1/2 cup) brown sugar

  • 90 g (1/4 cup) honey

  • 1 teaspoon vanilla bean paste

  • 200 g (2/3 cup) self-raising flour

  • 1/2 teaspoon salt

  • 2 eggs, lightly beaten

  • 50 g dark chocolate, melted

  • 50 g white chocolate, melted

    Preheat the oven to 180°C and line the base and sides of a 20 cm x 20 cm baking dish with baking paper.

    Melt the butter, chocolate, brown sugar and honey in a medium saucepan over medium heat, stirring until smooth. Remove from the heat, add the vanilla, flour, salt and eggs and mix with a wooden spoon until combined. Pour into the prepared tin and bake for 30 minutes or until just firm. Cool on a wire rack.

    Cut the brownies into bars, place on a serving platter and drizzle with dark and then white chocolate. Leave to set for a few minutes before serving.
