A delicious sweet treat for sharing with family and friends.


  • 2 Sunny Queen Eggs for Soldiers

  • 2 cups self raising flour

  • 1/2 cup oats

  • 1/2 cup raw sugar

  • 1 tsp baking powder

  • 3/4 tsp cinnamon

  • 1/2 cup white chocolate bits

  • 1 1/2 cups fresh berries

  • 1/2 cup buttermilk

  • 1/2 cup skim milk

  • 1/3 cup reduced fat margarine, melted

  • 1 tsp vanilla essence


  • 1.

    Combine all dry ingredients in a bowl and add berries.

  • 2.

    In a separate bowl, mix the wet ingredients. Make a well in the centre of the dry ingredients and pour in the wet, mixing gently.

  • 3.

    Divide into 18 muffin trays and bake at 180°C for about 25 minutes. Cool on a rack.

  • 4.

    Serve with more fresh berries and a fruit puree poured over the muffin.
