Preheat oven to 220°C. Trim most of the fat from the piece of beef. Mix together the raw honey and mustard and brush over the roast in a thick layer. Place in a roasting tray and bake for 15 minutes, reduce the temperature to 180°C and continue to cook for 1 to 1 ½ hours for medium, or until done to your liking.
