Method

Place chicken in large pot

Add chicken stock and the just cover chicken with water
4.
Add pepper and salt and bring to boil, reduce to simmer for 1 hour covered

Remove chicken and allow it to cool completely
6.
Reserve the stock for later in another bowl
7.
Remove the skin from chicken
8.
Take all the meat of the chicken and break into bite size pieces, set aside
9.
In the pot at medium temp melt the butter
10.
Add the flour slowly and mix through the butter until completely mixed and cook for 5 minutes

Add curry powder and mix well continuing to cook for another 5 minutes, keep it moving
12.
Slowly add the cooking stock back and use a whisk to keep it moving until the desired thickness
13.
Cook for 10 minutes at a low temp and keep adding stock if it gets too thick
14.
Finally add cooked chicken and cook for a further 5 minutes to heat the chicken.
15.
Serve with basmati rice and topped with chopped shallots
