Very nice family Curry, for any occasion.


  • Ingredients

  • 1 whole fresh chicken 1.6kg

  • 4 cups chicken stock (see my recipe on my page on this site)

  • 125 grams butter

  • 2/3 cup plain flour or rice flour, I prefer rice flour

  • 1 ½ desert spoons curry powder I use Keens traditional curry powder

  • 2 cups basmati rice

  • 2 teaspoons cracked black pepper

  • ½ teaspoon salt

  • 2 shallots chopped for topping

  • 1 large pot

  • Water

    Place chicken in large pot

  • 3.

    Add chicken stock and the just cover chicken with water

  • 4.

    Add pepper and salt and bring to boil, reduce to simmer for 1 hour covered

  • 5.

    Remove chicken and allow it to cool completely

  • 6.

    Reserve the stock for later in another bowl

  • 7.

    Remove the skin from chicken

  • 8.

    Take all the meat of the chicken and break into bite size pieces, set aside

  • 9.

    In the pot at medium temp melt the butter

  • 10.

    Add the flour slowly and mix through the butter until completely mixed and cook for 5 minutes

  • 11.

    Add curry powder and mix well continuing to cook for another 5 minutes, keep it moving

  • 12.

    Slowly add the cooking stock back and use a whisk to keep it moving until the desired thickness

  • 13.

    Cook for 10 minutes at a low temp and keep adding stock if it gets too thick

  • 14.

    Finally add cooked chicken and cook for a further 5 minutes to heat the chicken.

  • 15.

    Serve with basmati rice and topped with chopped shallots


This is a mild curry and can be made hotter by adding more curry powder or chilli powder A good stock made with all good ingredients will be enough flavour, Please see my CHICKEN STOCK Recipe on this site in my pages.
