Simply cut all vegetables into pieces and place in large pot.
Pour 6 litres of water in
Put all herbs and peppercorns in and add a teaspoon of salt.
Bring to the boil and then let simmer for 6 hours.
Don’t crush vegetables, just stir occasionally
After 6 hours strain through a fine sieve
Place back on stove at a slow boil to reduce a little for 1 hour with lid off
Allow to cool and use
