A very easy to make vegetable stock.

Ingredients

  • WHAT YOU NEED.

  • 4 stalks shallots

  • 3 brown onions cut and skin on

  • 3 Tomato’s

  • 2 Carrots cut in pieces

  • 1 cup fresh parsley

  • 2 Potato’s

  • 4 large cloves garlic

  • 4 stalks celery

  • 6 mushrooms

  • 1 desert spoon whole peppercorns

  • 2 Bay leaves

  • 2 fresh sprigs of thyme

  • 2 pieces sweet Potato

  • ½ red pepper

  • 6 litres water

  • And really any vegetables you have in the fridge that you don’t want anymore.

    Simply cut all vegetables into pieces and place in large pot.

  • 3.

    Pour 6 litres of water in

  • 4.

    Put all herbs and peppercorns in and add a teaspoon of salt.

  • 5.

    Bring to the boil and then let simmer for 6 hours.

  • 6.

    Don’t crush vegetables, just stir occasionally

  • 7.

    After 6 hours strain through a fine sieve

  • 8.

    Place back on stove at a slow boil to reduce a little for 1 hour with lid off

  • 9.

    Allow to cool and use
