Try this roulade for a delicious afternoon treat or snack.


  • 4 eggs

  • 2 tablespoons butter

  • 1 tablespoon sour cream

  • 1 teaspoon self raising flour

  • 1 pinch of ground cumin

  • 200g cottage cheese

  • 100g baby spinach

  • 150g Macabella choc Macadamia spread

  • Salt and pepper to taste


  • 1.

    Blend eggs, salt and pepper, cumin, sour cream and flour until combined.

  • 2.

    Melt butter in a large round frying pan and add half the egg mix.

  • 3.

    Pop in a hot oven for 2-4 mins or until firm to touch.

  • 4.

    Place cooked omelette on greaseproof paper.

  • 5.

    Spread half of the Macabella choc Macadamia spread gently over top with cottage cheese sprinkled, and baby spinach.

  • 6.

    Gently roll the omelette over firm, so you have a Swiss roll looking omelette.

  • 7.

    Trim the ends of your omelette and then cut in half, then each piece in half again. This gives you four roulade rolls.
