This is a real refreshing and slightly unusual oyster dish which once tried will be one of your favourites.


  • 2 dozen oysters opened

  • ½ onion

  • 4 cups of very ripe cherry tomatoes

  • 3 tablespoons extra virgin olive oil

  • Salt pepper

  • Little basil leafs for the salsa and the garnish


  • 1.

    Place the onion into the chopping bowl of the Electrolux Masterpiece Immersion Blender (or similar product) and chop finely using the lowest speed.

  • 2.

    Heat a sauce pan, add olive oil and cook the onion till slightly golden.

  • 3.

    Add the tomatoes to the Electrolux Masterpiece Immersion Blender chopping bowl (or similar product) and chop roughly using the lowest speed. Add to the onions and cook until the tomatoes turned into a thick paste.

  • 4.

    Remove the oysters from the shell and place into a separate bowl. Wash the oyster shells and set them aside for serving.

  • 5.

    Remove the tomatoes from the heat. Tear the basil into the tomatoes and season.

  • 6.

    Spoon some of the mixture into each shell and top with an oyster and serve.

  • 7.

    Garnish with some more basil leafs.
