This recipe is healthy, quick, and contains lots of healthy coconut oil.
For the crust:
Combine all ingredients in the Electrolux Masterpiece Collection blender (or similar product). Turn on the ice crush button and process for 1 minute until ground fine and press into an 18cm (7 inch) cake ring, pressing firmly to get into the edges of the cake ring.
Wash the blender jug.
For the filling:
Place pine nuts, lemon juice lemon zest and honey into the Electrolux Masterpiece Collection blender (or similar product). Press the power button followed by the ‘three speed’ button and blend until smooth (approx. 2 mins).
Add the coconut oil and boost once or twice to blend through the mixture.
Pour over crust and chill in the fridge until set (approximately 4 to 6 hours or overnight)
To serve top with flaked coconut.
