  • 3 large egg whites

  • 4 large ripe bananas

  • ½ cup crushed pineapple (freshly crushed in blender)

  • ½ cup applesauce

  • ¼ cup Natvia

  • 1 ½ cup plain flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon vanilla extract


  • 1.

    In a large mixing bowl mash up bananas.

  • 2.

    Add in pineapple, applesauce, Natvia, flour, baking powder, baking soda, vanilla extract and mix to combine.

  • 3.

    In a separate bowl beat egg whites till stiff peaks form.

  • 4.

    Fold in egg whites into banana mixture.

  • 5.

    Pour into cupcake tin and bake at 170 degrees celcius for 18 minutes.
