For a light and delicious salad, try this this gourmet creation using in-season Green Star apples.


  • 2 Green Star apples (or similar variation)

  • 8 slices prosciutto

  • 100g baby rocket

  • 75g goats cheese

  • 2 tablespoons olive oil

  • 3 teaspoons lemon juice

  • 2 teaspoons chopped chives

  • Cracked black pepper, to serve


  • 1.

    Cut the Green Star apple into very thin slices. Set aside.

  • 2.

    Tear the prosciutto into rough pieces.

  • 3.

    Arrange the rocket in serving bowls along with the apple slices and prosciutto. Crumble over the goats cheese.

  • 4.

    Whisk together the oil, lemon juice and chives. Drizzle over salad and serve sprinkled with cracked black pepper.
