Light, lean and lovely, these will fast become a family favourite.
In a non-stick frying pan over medium heat, brown the mince.
Add the carrot and onion and stir to combine.
Add the Taco seasoning, Metamucil and water, stir, reduce heat and simmer for 10 minutes.
Serve in crisp, fresh lettuce cups.
Serve topped with sour cream, chopped avocado and tomato.
