Light, lean and lovely, these will fast become a family favourite. 


  • 500g lean mince (beef, chicken or turkey)

  • 1 carrot, grated

  • ½ onion, finely chopped

  • 30g packet Taco seasoning

  • ½ tablespoon Metamucil NATURAL Granular (or similar product)

  • ½ cup water

  • 8 ice-berg lettuce cups


  • 1.

    In a non-stick frying pan over medium heat, brown the mince.

  • 2.

    Add the carrot and onion and stir to combine.

  • 3.

    Add the Taco seasoning, Metamucil and water, stir, reduce heat and simmer for 10 minutes.

  • 4.

    Serve in crisp, fresh lettuce cups.

  • Optional:

  • 1.

    Serve topped with sour cream, chopped avocado and tomato.
