A light, spongy burst of energy to enjoy on the run.
Preheat oven to 180 degrees celsius. Line a 28 x 18cm loaf tin with baking paper.
In a medium bowl, mash the bananas. Stir in the sugar and Metamucil.
Add the mayonnaise, flour, and a pinch of sea salt and lightly mix until just combined.
Using a spatula, scrape the batter into the tin and bake until a skewer inserted into the centre comes out clean (about 45 minutes).
Let cool in the pan for 10 minutes, then turn onto a rack.
Enjoy it warm straight from the oven served as is or with a little butter and golden syrup.
Sprinkle generously with ground cinnamon before baking.
