Peel the Camote and slice into ½ inch thick slices.
Put the sugar on a plate.
Gently press the Camote against the sugar on all sides
In a pan, heat the oil. (Shallow fry)
Place Camote into the oil and fry until all of the Camote are cooked, Test with skewer
Put on timber skewers and serve, 0r place in bowl with forks.
