A beautiful way to cook slow cooked pork.

Ingredients

  • You Need

  • 1 x 2kg piece of Boneless shoulder Pork rolled and then unroll it.

  • 2 x Apples sliced into 10mm slices, skin on

  • Cracked Pepper (Too Taste)

  • 2 x Table spoons Rock Salt

  • 2 Litres boiling water Full kettle

  • Fennel Seeds 1 Table spoon

  • 1/4 Cup Olive oil

  • 12 x Fresh bread rolls

  • Coleslaw

  • Apple sauce

  • Large Roasting Pan

    Score Pork rind into 15mm Crisscross Pattern, being careful not to cut through to meat.

  • 4.

    Flatten pork over wire rack and slowly pour boiling water over Pork to open the Paws of rind.

  • 5.

    Pat dry making sure that all water has gone.

  • 6.

    Pour half the oil over Pork and gently rub into pork while still warm.

  • 7.

    Sprinkle salt, pepper & fennel onto oil and rub all over meat well

  • 8.

    Place Sliced apple onto base of pan to cover the pork area, add remaining oil over apple.

  • 9.

    Place pork onto apple.

  • 10.

    Place into Oven and cook for 4 Hours At 140Deg C. (Uncovered) For the last half hour or so then turn up to 230Deg C to crackle.

  • 11.

    Check every hour.

Notes

Recipe By my son, Anthony Apogremiotis Serving Suggestions Remove crackle and cut into smaller pieces. Or (just get a knife and shred the whole lot) the whole lot will just fall apart and then you have crackle with every bite. With Two forks shred pork for bread rolls (shreds very easy) or (crackle and pork all mixed together) Coleslaw for rolls Apple sauce Serve on platter or board As Photo
