Score Pork rind into 15mm Crisscross Pattern, being careful not to cut through to meat.
Flatten pork over wire rack and slowly pour boiling water over Pork to open the Paws of rind.
Pat dry making sure that all water has gone.
Pour half the oil over Pork and gently rub into pork while still warm.
Sprinkle salt, pepper & fennel onto oil and rub all over meat well
Place Sliced apple onto base of pan to cover the pork area, add remaining oil over apple.
Place pork onto apple.
Place into Oven and cook for 4 Hours At 140Deg C. (Uncovered) For the last half hour or so then turn up to 230Deg C to crackle.
Check every hour.
