This is a delicious meal of Queensland Mud Crabs


  • 4 Large mud crabs, these were 2.5 kg each

  • Boiling water in a large pot

  • Rock salt ½ cup

  • Ice water, This releases the meat from the shell


  • 1.

    Put live crabs in freezer for 30 minutes before this.

  • 2.

    Half fill Large pot with water and bring to boil.

  • 3.

    Put salt in boiling water.

  • 4.

    Put sleeping crabs in boiling water and cook for 25 minutes only

  • 5.

    Remove cooked crabs and put straight into ice water, This releases the meat from the shell, kitchen sink is good for this.

  • 6.

    Let sit in ice water until cooled, maybe 20 minutes.

  • 7.

    Empty sink and clean crabs,

  • 8.

    Remove the top shell

  • 9.

    The easiest way is to prise it away starting from the back of the crab and moving forward.

  • 10.

    Next, grab a good sharp knife and slice the crab in two, then remove the claws and legs if you want. I don’t.

  • 11.

    Using your hands, remove the lungs, the “poo” and the “head poo”.

  • 12.

    Then rinse well

  • 13.

    You can put in fridge for 30 minutes to have cold crab, and its nice like this.

  • 14.

    Ready to serve


Serve with Greek salad and fresh bread, and a beer or white wine. These crabs were caught by me at my home in Queensland Australia.
