Impress your special someone this Valentine's Day with a gourmet dish, thanks to Superior Gold Smoked Salmon.


  • 200 grams smoked salmon

  • 1 small fennel bulb, finely sliced

  • 1 bunch red radish, picked, washed

  • 2 green apples, grated into matchsticks

  • 1 lemon, juice

  • 100 grams sugar snap peas, finely sliced

  • 1/2 bunch dill, finely chopped

  • 1 punnet mustard micro herbs

  • 1blood orange, rind and juice

  • 2 tablespoon grapeseed oil


  • 1.

    Separate salmon slices onto a platter.  Cut the salmon into smaller pieces, but not disturbing your arrangement. Cover and refrigerate.

    Use a mandolin or cut by hand, fine slices of fennel and radish. Grate the apple on the mandolin as well. Mix all ingredients into a bowl with the lemon juice.

  • 3.

    Add sliced sugar snaps, and dill. Whisk together rind, 1/4 cup of orange juice, grapeseed oil, salt and pepper.

  • 4.

    Top the salmon platter with salad, micro herbs and dressing to serve. Note, can serve with crème fraiche and thin toasts if desired.

  • 5.

    Serve with a crisp Sauvignon Blanc.
