  • 60g light cream cheese

  • 1 tsp icing sugar

  • 1 tsp lime zest, grated

  • 46g meringue, vanilla, (20 mini)

  • 1 tbs berry jam, (raspberry)


  • 1.

    Place cream cheese in a small bowl and stir through the icing sugar and zest.

  • 2.

    Spread a thin layer of jam on each flat side of the mini meringues. Place one tsp of cream cheese mixture on flat side of meringue, sandwich together with another meringue. Serve immediately.
