Do you want to impress your guests with an indulgent Australia Day dessert? Serve the Vegemite Caramel Gelato on a warm brioche bread slice or as a filling for a buttery croissant!


  • Caramel Sauce

  • 400g Sugar

  • 200ml Water

  • 1 Vanilla Bean

  • Vegemite Caramel Sauce

  • 300g Caramel Sauce

  • 200g Vegemite

  • Vegemite Caramel Gelato

  • 1L Gelatissimo Vanilla Gelato

  • Vegemite Caramel Sauce


  • Caramel Sauce:

  • 1.

    Melt the sugar in a heavy bottom pan and at the same time bring the water to the boil in another pan.

  • 2.

    When the sugar has caramelised (becoming brown in colour), add it to the boiling water stirring quickly.

  • 3.

    Remove from heat, continue stirring for 1 minute and then set aside in a jar to cool down.

  • Vegemite Caramel Sauce:

  • 1.

    Add Vegemite to the previously prepared Caramel Sauce, mixing it until smooth.

  • Vegemite Caramel Gelato:

  • 1.

    Drizzle the Vanilla gelato with Vegemite Caramel Sauce, mix it well to ensure good distribution of the sauce throughout  the gelato.
