This Australia Day, prevent over-indulgence with this healthy yet delicious meal, created by Weight Watchers.
Place chicken and Greek seasoning in a medium bowl, tossing well to coat. Thread chicken slices onto 4 skewers.
Lightly spray a barbecue or chargrill pan with oil and heat to medium-high. Add skewers and cook for 4–5 minutes each side or until chicken is cooked through.
Place pita bread on serving plates and top with skewers, onion, tomato and cucumber. Serve with mixed leaf salad.
Remember to soak the wooden skewers in cold water for 10 minutes before threading chicken as this will prevent them from burning during cooking.
