These canapes made using Superior Gold Smoked Salmon are the perfect option for New Year's Eve entertaining.
Finely chopped cucumber, place in a deep bowl and set aside.
Place rice vinegar, sugar, chilli, seeds into a pan and bring to boil. Cool, and then pour over cucumber. Set aside to infuse.
Dissolve the yeast in ½ the milk. Place the flour into a bowl and make an indentation in the centre. Whisk in the yeast and milk mixture. Set aside in warm place for 20 minutes.
Warm the remaining milk and whisk in the egg yolk. Fold into pervious mixture and mix in well, Set aside for 35mins.
Beat the egg white until sharp tips form and fold into mixture.
Heat a large pan over a medium heat. Lightly oil.
Using a tablespoon, two tablespoons for breakfast size, and spoon mix into pan, cook for one minute on each side.
Top blinis with salmon, crème fraiche, sliced cucumber.
Serve with dill and lemon.
