This recipe is as easy as it gets, and the perfect alternative if you're after something non traditional this Christmas.


  • 2 Portions of Simply Cake batter

  • 1 Can of pineapples in syrup

  • 2 Tbs of icing sugar

  • Simply Cake batter

  • 200g of Self raising flour

  • 300g of Caster sugar (You can use white sugar and even raw sugar)

  • 5 Large eggs

  • ½ tsp of Baking powder

  • ½ tsp Vanilla extract

  • 200g of Cooled melted butter

  • 1 pinch of Salt

  • 1 Orange zested


  • 1.

    Preheat your oven to 200C or 180 fan forced.

  • 2.

    Open the can of pineapples and arrange pineapples along the base of a 25cm cake tin. Next pour in 5 tablespoons of syrup or just enough to coat all of the base.

  • 3.

    Pour the Simply Cake batter into the cake tin and place in the oven. Bake for 30-35 minutes or until a skewer comes out clean.

  • 4.

    Allow the cake to cool slightly for 15 minutes then turn it out onto a wire rack to continue to cool completely.

  • 5.

    To serve place on a cake stand and dust liberally with icing sugar. I like to serve mine with double cream or ice cream just for that little extra indulgence.

  • Simply Cake batter:

  • 1.

    In a large bowl place 200g Caster sugar, S.R flour, eggs, baking powder, vanilla, butter, salt and orange zest and stir with a wooden spoon until combined. (If there are lumps in your batter you can then use a whisk to finish combining all your ingredients).
