This bite size delight is the perfect combination of salty and sweet, creating an amazing fresh flavour sensation. It is best served while the cheese is still slightly warm.
Cut watermelon into 2 cm thick slices and then into 2cm cubes. Slice haloumi into 1cm slices and then halve to be the same shape as the watermelon.
Heat a non-stick frying pan on medium heat. Toss haloumi pieces in oil, then fry for 1 minute each side until golden brown.
In a small bowl, mix dressing ingredients. Taste and adjust to your liking.
Arrange the watermelon cubes on a serving tray, top with slice of haloumi, and dollop with a small spoonful of dressing.
Top with a small mint leaf to serve.
