This glaze created by culinary whiz Simmone Logue will impart juicy sweetness and flavour into your Christmas ham.


  • 4 oranges, juice and zest

  • 2 cloves garlic, crushed

  • 2 heaped teaspoons seeded mustard

  • ½ bunch fresh thyme, chopped

  • 2 cups brown sugar

  • 2 teaspoons salt


  • 1.

    Combine all ingredients in a saucepan and simmer over low heat.

  • 2.

    Reduce for 10mins. 

  • 3.

    The glaze will last for a couple of weeks in the fridge before use.
