Take the stress out of Christmas cooking with this dish created by culinary whiz Simmone Logue.

Ingredients

  • 2 trouts, fillets taken off the bone

  • ¼ bunch shallot, chopped finely

  • ¼ bunch parsley, chopped finely

  • ¼ teaspoon chopped dill

  • ½ cup sour cream

  • ½ cup mayonnaise

  • 1 lemon zest & juice

  • Salt & pepper

Method

  • 1.

    Place all ingredients in a bowl and combine. Season to taste.

  • Note:

  • 1.

    If you plan to make the rillettes a week or so in advance, leave out the lemon juice and add before serving.
