Celebrate summer with this simple, yet impressive Macadamia-inspired drink, perfect for entertaining with ease throughout the holiday season.


  • 1 cup macadamia milk*

  • 1/2 cup coconut milk

  • 1 cup pineapple juice

  • 2 tablespoons palm sugar

  • 1/2 cup Malibu rum

  • 1 cup crushed ice

  • Crushed ice, extra to serve

  • Note

  • *Macadamia milk is available at some specialty stores and supermarkets.


  • 1.

    Place all ingredients in a drink blender, except for extra ice to serve and blend until smooth.

  • 2.

    Pour into a cocktail glass over the extra crushed ice. Serve immediately.

    For a macadamia Pina Colada mocktail leave out the Malibu rum.
