Plum Clafoutis Crumble

Ingredients

  • 750g plums, cut in quarters and stone removed

  • 1 tablespoon Norbu sweetener

  • ¼ cup Norbu sweetener

  • 2 eggs

  • 1¼ cups skim milk

  • 2 tsp vanilla extract

  • 1 cup plain flour

  • ¼ teaspoon salt

  • 1/3 cup wholemeal spelt flour

  • 1/3 cup rolled oats

  • ½ teaspoon cinnamon

  • ½ teaspoon ginger

  • ¼ teaspoon salt

  • ¼ teaspoon cardamom

  • 2 teaspoons Norbu sweetener

  • 50g coconut oil, melted

  • 50g walnuts, chopped

Method

  • 1.

    Preheat oven to 180°C and spray a removable bottom cake tin with oil.

  • 2.

    Arrange plums in tin, packing tightly in a circular pattern, covering the whole base. Sprinkle with 1 tablespoon of Norbu.

  • 3.

    Beat 1/4 cup Norbu and eggs together for a few minutes, add milk and vanilla and continue to beat for another minute.

  • 4.

    Add flour and salt, blend until combined, pour over plums and bake for 20 minutes.

  • 5.

    Combine remaining crumble ingredients in a clean bowl, scatter over cake and bake for another 20-25 minutes, or until an inserted toothpick comes out clean.

  • 6.

    Cool in tin for 10 minutes before serving.
