Recipe by Weigh It Up


  • 500ml white wine vinegar

  • 4 cardamom pods, cracked with the back of a knife to release seeds

  • 3 star anise

  • 12 peppercorns

  • ½ teaspoon salt

  • 4 bay leaves

  • ¾ cup Natvia Stevia blend

  • 500g cherries, with stalks attached


  • 1.

    Bring all ingredients, except cherries, to a simmer in a saucepan for a few minutes.

  • 2.

    Add cherries and return to the boil, remove from heat then pour into sterilized jars, stand for 10 minutes and seal.

  • 3.

    Label “Refrigerate after opening”.
