Lupin Muffiins

Ingredients

  • 1 cup Kibbled Lupin

  • 1 cup Sultanas

  • 1 cup plain flour

  • 1 cup milk

  • 2 tablespoon butter or 60ml vegetable oil

  • 2/3 cup brown sugar

  • 1 egg

  • 1 teaspoon cinnamon

  • ½ teaspoon baking soda

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 1 tablespoon golden syrup

  • ½ teaspoon vanilla essence extract

Method

  • 1.

    Pre heat oven to 180 c.

  • 2.

    Mix together kibbled Lupin and the milk. Stand for about 10 to 20 minutes.

  • 3.

    Soften the butter, add the egg, sugar, vanilla and mix.

  • 4.

    Then add kibbled lupin mixture and mix together.

  • 5.

    Now put in the sultanas.

  • 6.

    Sift, flour, baking soda, baking powder and salt into the mixture.

  • 7.

    Fold the mixture carefully until just mixed. NO more than 15 times.

  • 8.

    Mix to much and the muffins will be real flat.

  • 9.

    Cook for about 20 mins cook time depends on the size you make the muffins.

Kibbled Lupin can be replaced with bran. Lupin is very high in protein
