The Nordic countries have an extremely strong regional food culture that the rest of the world is only beginning to discover. New Nordic Cuisine is about keeping things pure, seasonal, local and fresh.


  • For the pork

  • 4 pork chops on the bone

  • 1 tbsp butter

  • 1 bunch of fresh thyme

  • 2 cloves garlic

  • Salt

  • For the apple saute

  • 2 apples

  • 4 spring onions

  • 100g pointy head cabbage

  • 1 tsp. fresh thyme chopped

  • 100g green beans

  • 3 tbsp capers

  • 1 tbsp white wine vinegar

  • 2 tbsp rapeseed oil


  • For the pork:

  • 1.

    Cook the pork chops in a pan on medium heat with thyme and garlic.

  • 2.

    Turn the meat quite often making sure all surfaces turn a nice, golden colour.

  • 3.

    To see if the meat is done, cut with a knife along the bone to check if the meat is white and juices are clear.

  • 4.

    Leave the meat to rest for 10 minutes before serving.

  • For the apple saute:

  • 1.

    Cut apples and spring onions into big chunky pieces and tear the cabbage into rough pieces.

  • 2.

    Stir fry everything in a very hot pan with rapeseed oil.

  • 3.

    Add the thyme and cook for 2 minutes.

  • 4.

    Slice the green beans and add to the pan together with capers and vinegar.

  • 5.

    Cook for another minute until the heat has penetrated the beans.
