Chargrilled  Sirloin  Steak  with Grilled  Vegetables, Cannellini Bean and Pesto Salad

During the stressful exam period, ensure your kids are eating the right nutrients. Red met, such as beef and lamb, are the best sources of iron and zinc, and are proven to affect concentration.

Ingredients

  • 4 x 200g sirloin steaks, trimmed of fat   

  • 1½  tbsp olive oil   

  • 1 red onion, cut into large rings   

  • 2 zucchini, sliced diagonally   

  • 1 red capsicum, cut into wide strips   

  • 100g baby spinach leaves   

  • 400g can of cannellini beans, rinsed and drained   

  • 2 tablespoons basil pesto   

  • Zest of 1 whole lemon and juice of ½ a lemon   

Method

  • 1.

    Brush the beef steaks with 2 tsp of the oil and cook on high on a barbeque or chargrill pan until    cooked to your liking. Remove from heat, cover with foil and allow to rest for 10 minutes.   

  • 2.

    Toss the onion, zucchini and capsicum with the remaining oil and grill for 2-3 minutes on   

  • 3.

    Each side or until cooked through.      

  • 4.

    Transfer the cooked vegetables to a large bowl and allow them to cool slightly before adding the spinach leaves, cannellini beans, pesto lemon zest and lemon juice. Stir to combine.   

  • 5.

    Serve beef steaks with salad.
