Inspired by the oats in new Special K Nourish range, these crackers are delicious served with spoonfuls of cottage cheese, topped with a few flakes of smoked trout and slices of cucumber with a little dill.
Combine 60g oats, plain flour, sugar, baking powder and a sprinkle of salt in a food processor and blitz for five seconds. Add the softened butter and blitz to a crumb consistency.
Add the milk and mix to form a soft dough.
Tip dough mixture onto the bench and knead into a ball, then wrap in cling film and rest in the fridge for 20 minutes.
Roll out the dough into just over 0.5cm thick and cut out with an 8cm cutter.
Transfer crackers to a baking tray and sprinkle with the remaining oats and a little salt.
Bake for 15 minutes at 160°C until slightly golden and then allow to cool.
