Drawing inspiration from the new Special K Nourish range, this cranberry and apple compote makes a lovely, healthy dessert.
Peel and core granny smith apples and slice, six slices per each half.
Heat the sugar, cinnamon, vanilla bean and cranberry juice in a large stainless steel saucepan and bring to simmer. Add the dried cranberries and simmer gently for five minutes.
Add the apple slices and simmer gently on a very low heat until the apple is tender and cooked.
Note: Do not over stir or break up the apple
Allow mixture to cool in its own liquid.
Serve warm or cold with thick vanilla yoghurt.
