This is a wonderful Sunday breakfast and you can use whatever in your pantry!


  • 2 small Desiree potatoes (the ones with the red skin), diced small

  • Oil

  • 4 eggs

  • Chili seeds or powder, one teaspoon

  • Mixed herbs, one teaspoon

  • 6 or so cherry tomatoes, halved

  • Handful of leftover mixed steamed vegetables (beans, cauliflower, carrot and peas), you could put in frozen mixed vegetables they don't have to be leftovers, you could use leftover roasted chicken and vegetables whatever you have in the fridge (mushrooms would work perfectly)

  • Maggie seasoning sauce (spicy version), you could use the normal one


  • 1.

    Line your pan with oil and dice your potatoes, then add to pain and roast until soft and golden brown.

  • 2.

    While cooking, crack 4 eggs into a bowl and beat, add your mixed herbs and chili powder (optional), it's also totally up to you how much you would like, also season with some salt and pepper.

  • 3.

    Check on your potatoes and then prepare your cherry tomatoes by halving them and preparing your other vegetables.

  • 4.

    Once potatoes are cooked removed them from pan and drain on paper towl as well as covering them with aluminium foil or something to keep them warm.

  • 5.

    Add a little more oil to your pan if there isn't some left over and add your tomatoes and other vegetables, cook for a few minutes and then add Maggie or desired sauce and cook for a few more minutes.

  • 6.

    Then add your eggs and you can either turn it into scrambled eggs or wait for the omlette to form.

  • 7.

    One cooked put on a plate, add your cooked potatoes on top.

  • 8.

    You can even put a side of toast topped with hummus and cottage cheese or whatever you have in your fridge.
