Made with coconut, butter cream and Malibu, this cake is a must try at home.
Pre heat the oven.
Grease and line the cake.
Place the all the cake ingredients into large bowl. Using an electric hand mixer bring all the ingredients together on the slowest setting.
Once the ingredients are combined, increase the speed and mix for one minute.
Spoon the mixture into the prepared tin and smooth the top so its level.
Bake in the middle of the oven for 1hour 45mins – 2 hours. The cake should be springy to touch and golden brown in colour.
Leave to cool in the tin for 5 minutes, remove and place on a wire rack.
To make the butter cream, beat the butter till soft. Gradually add the icing sugar and mix until it’s all incorporated. Stir in the Malibu.
Slice the cake horizontally to create 3 layers. Sandwich these together with the butter cream.
