Mix mince, onion, garlic, egg, breadcrumbs, salt and pepper together in a medium size bowl. Shape into 12 patties and dust with a little flour. Set aside.
To prepare the burgers, roughly chop lettuce leaves; finely slice red onion; slice tomatoes. Halve burger buns, being careful to not cut all the way through. Cut avocado in half, remove the stone and slice the flesh; cut cherry tomatoes in half.
Heat oil in a large fry-pan on medium-high heat and cook patties for 2–3 minutes on each side until cooked through. Set aside and cover to rest for a couple of minutes. Warm buns in the same fry-pan, cut side down, for 1-2 minutes or until lightly golden.
To Serve :
Spread tomato relish or sauce on one side of a bun and
Mayonnaise on the other side. Fill each bun with cheese, a patty, lettuce,
Tomato and onion. Combine any remaining fillings with avocado and
Cherry tomatoes. Divide mini brioche burgers and salad between plates.
