Try your hand at this delicious breakfast recipe, complete with homemade mustard mayonnaise. 


  • Mustard mayonnaise

  • 2 tbsp Keen's mustard

  • 1 tbsp water

  • ¼  cup mayonnaise

  • Dough

  • 500g plain flour

  • 3 tsp baking powder

  • 2 tsp salt

  • 1 tbsp Keen's mustard

  • 1 ¼ cups water

  • ¼ cup olive oil

  • 12 slices of smoked ham/prosciutto

  • 6 fried eggs

  • 3 cups rocket


  • 1.

    In a bowl mix together the Keen's mustard mayonnaise ingredients.

  • 2.

    In a separate bowl mix together all the dry ingredients for the dough.

  • 3.

    Make a well and add the oil, water and knead for 10 minutes into soft dough.

  • 4.

    Rest covered for one hour in room temperature.

  • 5.

    Divide the dough into six balls and roll each ball out into circles 5mm thick, dock with a fork to ensure the dough does not to puff while cooking.

  • 6.

    Heat a non-stock fry pan and fry each piece on each side for 3-4 minutes until golden.

  • 7.

    Spread each Piadina with mustard mayonnaise, top with ham/prosciutto, rocket and a fried egg.
