Salmon Coulibiac

This delicious recipe features flavours of cumin, coriander, cardamom and dill.

Ingredients

  • 100g Basmati Rice – cooked with a pinch of turmeric

  • 75g Butter

  • 1 onion – finely chopped

  • 1 tsp – cumin seeds

  • 1 tsp – coriander seeds

  • 2 cardamom pods

  • 150g Closed Cup mushrooms- sliced

  • Zest of 1 lemon

  • 2 tbsp chopped parsley

  • 2 tbsp chopped dill

  • Salt & Pepper

  • 500g Puff Pastry

  • 300g cooked salmon fillet

  • 3 hard boiled large eggs – shelled and sliced

  • Egg wash to glaze

Method

  • 1.

    Pre heat the oven to 200c Gas 6

  • 2.

    Melt the butter in a large sauté pan and gently fry the onion until soft but not coloured. Add the cumin, coriander seeds and cardamom pods.

  • 3.

    Add the sliced mushrooms and cook until softened.

  • 4.

    Stir in the cooked rice, lemon zest, parsley and dill. Season with salt and pepper.

  • 5.

    Roll out half of the pastry to approximately 22cmx35cm. Place onto a baking tray.

  • 6.

    Spread the rice mixture down the centre of the pastry leaving a 4cm boarder all the way round. Flake the salmon on top of the rice. Arrange the egg slices over the salmon.

  • 7.

    Brush the edges of the pastry with beaten egg. Roll the remaining pastry, slightly larger than the first piece. Sit this over the coulibiac and press the edges to seal the two pieces of pastry together. Trim the edges.

  • 8.

    Cover the coulibiac with egg wash and bake for 30 - 35minutes until the pastry is crisp and golden. Leave to rest for 10 minutes before slicing.
