This recipe can also be used to make a large cake.


  • 250g Lurpac unsalted butter

  • ½ cup Natvia stevia blend

  • 2 teaspoon vanilla extract

  • 2 free range eggs

  • 3 cups self-raising flour

  • ½ cup soy milk

  • 4 ripe bananas mashed


  • 1.

    Preheat oven at 170 degrees Celcius. Melt butter, Natvia and vanilla in a pot over low heat.

    Sift flour in a mixing bowl, add eggs, soy milk, mashed bananas and butter and mix well. Place mixture in a non-stick cupcake pan or in a loaf pan if you want to make a whole cake or 30 minutes.
