One of the all-time classic cocktails, this version is made with white rum, plenty of mint and lime cordial.


  • 10 mint leaves

  • 1 tsp sugar

  • Lime wedges

  • 45 ml white rum

  • 30 ml Suncoast Limes Fresh Lime Cordial

  • Soda water.


  • 1.

    Place mint leaves, sugar and lime wedge in a highball glass

  • 2.

    Muddle together until the sugar is mostly dissolved and there is a strong aroma of mint

  • 3.

    Fill the glass with crushed ice and stir in the rum, cordial and soda water

  • 4.

    Garnish with mint leaves, a slice of lime and serve.
