Place the chia seeds and cold water into a small bowl, stir well, and allow them to sit for 10 minutes. Line a baking tray with baking paper.
Meanwhile, place the almonds, oats, coconut, cocoa and Natvia into the bowl of a food processor and process until the mixture resembles coarse breadcrumbs (it doesn’t have to be too fine).
Add the chia seed gel and fresh dates to the food processor and process until the mixture just comes together. It should be able to be rolled into balls, not too sticky. If it’s too dry, you can add another tablespoon of water.
Roll teaspoonfuls of the mixture into balls, toss in the extra coconut and place onto the baking tray. Refrigerate for an hour or two before serving.
