Healthy Carrot Cake Muffins

Ingredients

  • 2 grated carrots

  • 2 cups of almond meal

  • ½ teaspoon bicarbonate of soda

  • ½ cup chopped walnuts

  • ½ cup desiccated coconut

  • Generous sprinking of cinnamon

  • ½ cup Natvia stevia blend

  • 1 teaspoon of vanilla essence

  • 2 eggs

  • ? cup olive oil

Method

  • 1.

    Set oven to 180°C

  • 2.

    Lightly grease a 12 hole muffin tray.

  • 3.

    Mix all ingredients together in a large mixing bowl.

  • 4.

    Spoon mixture evenly into muffin tray.

  • 5.

    Cook for 15-20 minutes or until cooked throughout.

Notes

Test if the muffins are ready by sticking a fork through the muffin, if no excess mixtures is stuck on the fork then the muffins are ready.
