Quinoa Bircher Muesli

Make breakfasts beautiful with the recipe for homemade bircher muesli, yum!

Ingredients

  • 1/4 cup(s) quinoa

  • 1/4 cup(s) dry rolled oats

  • 2 tsp pepitas

  • 1 medium Apple

  • 1/4 cup(s) apple juice

  • 1/4 cup(s) no-fat Greek-style natural yoghurt

  • 1/2 cup(s) fresh blueberries

  • 1 cup(s) tea, herbal, without milk

Method

  • 1.

    Cook 1/4 cup of quinoa in small saucepan with boiling water until water has absorbed.

  • 2.

    Place quinoa, 1/4 cup rolled oats, 2 tsp pepitas, 1 grated green apple, 1/4 cup no-added sugar apple juice and 1/4 cup no-fat Greek yoghurt in a large bowl.

  • 3.

    Serve muesli topped with blueberries. Serve with herbal tea or skim latte.
