This simple to make recipe is fantastic, healthy option for a mid week dinner.
Blend or process together, briefly, the walnuts, Parmesan, parsley, Vegemite and garlic. Add the oil and process until just combined.Place the swordfish on a paper lined baking tray and spoon some pesto onto each piece. Bake in a hot oven 200 oC for 10 minutes or until the fish is cooked.Place fish on serving plates with vegetables. Serve immediately.
