Swordfish with Vegemite and Walnut Pesto

This simple to make recipe is fantastic, healthy option for a mid week dinner.


  • 1 cup walnuts1 cup shredded Parmesan cheese1/2 cup roughly chopped flat leaf parsley1 tablespoons Vegemite2 cloves garlic3/4 cup oil6 swordfish steaksSteamed vegetables and roasted tomatoes, for serving

    Blend or process together, briefly, the walnuts, Parmesan, parsley, Vegemite and garlic. Add the oil and process until just combined.Place the swordfish on a paper lined baking tray and spoon some pesto onto each piece. Bake in a hot oven 200 oC for 10 minutes or until the fish is cooked.Place fish on serving plates with vegetables. Serve immediately.
