A coconut, cherry and dark chocolate brownie that is still not heavy and morish!


  • 2 cups caster sugar

  • 1 cup butter, melted

  • 1 cup cocoa

  • 2 tsp vanilla extract

  • 8 eggs, beaten

  • 3 cups self-raising flour

  • 1 tsp salt

  • 1 cup dessicated coconut

  • 1 tin black cherry, cut into quarters

  • 395g dark chocolate chips


  • 1.

    Preheat the oven to 170C

  • 2.

    Melt the butter

  • 3.

    Add the ingredients in order, as listed above

  • 4.

    Pour into a lined tin (I used a large round springform tin)

  • 5.

    Bake into the oven for 50 - 70mins

  • 6.

    Allow to cool before slicing into small diamonds

  • 7.

    Dust with icing sugar before serving
