Cut out the pasta and make your own with carrots for a tasty, healthy alternative.
Heat 1 tbsp of oil in a pan over medium heat, add onion and bacon, stirring for 5 minutes or until onion is tender. Add mushrooms and cook for an additional 3 minutes. Stir in cream and parsley, bringing mixture to a gentle boil. Reduce to medium-low heat, simmering for 5 minutes or until sauce has slightly reduced.
Using a peeler grate carrot and zucchini length wise into 1-2cm wide strips. Heat the remaining oil in a pan over high heat, place carrot and zucchini strips in the pan, and cook for around 30 seconds or until warmed through.
Spoon sauce over pasta and season with salt and pepper to serve.
